  • 2 bell peppers, seeded and sliced
  • 1 large zucchini, sliced into rounds
  • 1 large eggplant, sliced into rounds
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Sharay's Cashew Brittle, roughly chopped


  1. Preheat your grill to medium-high heat.
  2. Toss the sliced vegetables with olive oil and season with salt and pepper.
  3. Grill the vegetables for 8-10 minutes, flipping once, until they're tender and lightly charred.
  4. Transfer the grilled vegetables to a serving dish and sprinkle with crumbled feta cheese and chopped Cashew Brittle.
